Ever had a muffin in an egg before?

M u f f i n s... I N A N E G G.

Spring is here! Well, kind of... It may still be snowing up north, but according to the calendar, the season has begun! Which means Easter is right around the corner. Here's a fun little treat to bring to the table this Easter...

 

Look at how cute these little guys are! And they are actually a lot easier to make than you think. You can make them with any kind of muffin you'd like. I decided to make mine with nutella stuffed strawberry muffins.

What you'll need:

-One recipe for a dozen (12) muffins

*Nutella stuffed strawberry muffins-

2 cups all purpose flour

1 cup sugar

1/2 tsp salt

1 tsp vanilla

1 cup whole milk (can substitute for almond milk or coconut milk)

1/4 cup vegetable oil

3 tsp baking powder

1 cup diced strawberries

About 3/4 cup of nutella

12 eggs

[TIP: If you don't want to waste the eggs, use them to make some quiche lorraine]

DIRECTIONS:

STEP 1- Pre-heat oven to 350 degrees F

STEP 2- Clean and rinse off all your eggs.

STEP 3- Poke a hole through the top of one of the eggs, and shake until the yolk and the white come out. Repeat for the rest of the 11 eggs. Set one yolk and white aside in a bowl.

STEP 4- Spray the inside of the eggs with cooking oil. And then spray again. You want to be able to get the muffins out easily.

STEP 5- Prepare the muffin mix...

[For strawberry nutella muffins.... Mix together all dry ingredients. Next, beat one egg with a fork in the bowl you set aside, and mix with dry ingredients. Next, add the milk, oil, and vanilla. Stir. Then, fold in the strawberries.]

STEP 6- Spoon the muffin mixture into each egg shell.

[If making the nutella stuffed muffins, fill up the egg half way. Next, place a dollop of nutella on top. Then, fill the rest of the egg]

****TIP: Only fill the egg 3/4 of the way****

STEP 7- Place the filled egg shells into a muffin pan, with the hole facing up.

STEP 8- Bake for 20 min or until golden.

STEP 9- Let cool for 20- 30 min.

STEP 10- Crack open those eggs and E N J O Y!
